How do you separate poultry if you only want to cook some of it?

I bought two huge chicken thighs that were NOT frozen when I bought then, so I put it in my Fridge because I plan on cooking it soon. If I only want to cook one of them, can I put the other in the freezer? Or is that unsafe and should I just cook both of them?
Also, the same thing with other meats.. if I have them frozen, can I take out only some to cook, and then put the rest in a freezer-ziplock bag and keep it in the freezer?

Fresh chicken can be kept for 2-3 days in the fridge. As long as you are within that time limit it is fine to cook one and freeze the other. Raw chicken meat can be kept up to 6 months in the freezer if it is well packaged. Cooked chicken meat doesn't keep as long in the freezer (3 months).

With frozen meat, it is possible to separate individual portions to cook smaller amounts (by breaking them apart) but only if they remain frozen. Meat should only be defrosted once. Before freezing large packages it can sometimes be advantageous to separate them and repackage them. This also gets them out of the store packaging which isn't always the best/most durable way of keeping them in the freezer.
