What is the best way to cook ribs without a smoker?
We went out for Chili's ribs the other night. I forgot how good ribs are, it isn't something we eat very often... and I normally avoid Chili's. I was thinking it would be great to make some dry rub ribs. My favorite is a brown sugar rub. We have a nice gas grill, and an Electric Oven. How would we go about cooking ribs on our own?
Ok...I will give it up...my secret rib recipe.
Some will probably scoff at this recipe but I guarantee it produces great ribs. The key with any rib is low and slow.
Step 1: Pork ribs, remove the back layer of "skin". It is easiest to do this under cold running water and once you get it started it should just pull off like a sheet.
Step 2: Make your dry rub. I personally use around a cup of brown sugar and then mix in other seasonings: salt, pepper, garlic powder, touch of paprika, maybe some Emeril Essence seasoning.
Step 3: Set the slab of ribs on a large piece of aluminum foil. Then lightly coat the back side of the ribs with your dry rub and liberally coat the top side of the ribs with your dry rub. Then wrap the ribs in foil...you will probably need 3 or 4 layers...no holes in the foil or you will get leakage.
Step 4: All of the above should be done the night before as you are now going to put the ribs in the Fridge to let the dry seasoning soak in overnight.
Step 5: Time to cookem. Set your electric oven to 200 degrees and put the ribs wrapped in foil in the oven. Cook them 3-5 hours depending on how you like your ribs. The longer they cook the more they will get towards fall off the bone. Personally I cook mine ~3.5 hours as I like them to stick to the bone a bit...at 5 hours you will pick up the bone and the meat will simply fall off (they are pretty good this way too if you like a real tender rib)
Step 6: I remove them from the oven...let them rest a bit and then bring them out to the grill and put them over a hot grill for a couple minutes a side. At this point I generally add sweet baby ray’s bbq sauce. You can do them with or without sauce depending what you prefer. I just use this grill time to add a little smokiness as I use a charcoal grill with some sort of hardwood added and to burn the bbq sauce on a bit and impart a little smoke.
Step 7: EAT!
So these are not genuine bbq ribs but it turns out a dang good eating rib. It will be tender...the brown sugar rub will definitely impart some sweetness to the meat. Definitely better than anything you will eat at Chili’s...Enjoy...
