electric skillet as an oven?
My oven is broke. i have an electric skillet and i was wondering if i could use it as a make-shift oven. It has an adjustable temp. gage. I'm wanting to make corn muffins.

You will want to keep the temperature around 275, and preheat it with the lid on.
Put your muffin pan on a low rack or trivet to prevent burning at the bottom, or use metal skewers for shish kebabs if you don't have a trivet or rack. Since the tops won't brown, you might want to brush them with some melted butter to help them brown. Don't put the cover on all the way, put set it slightly askew, and "bake" for the recommended time. Just keep a close eye on the muffins!
